Recipe of the Month – June 2020

spinach berry salad with Strawberry Balsamic vinaigrette

Ingredients

For salad:

  • 1 lb fresh baby spinach, washed well
  • 1.5 cups assorted fresh berries
  • 1/4 cup toasted almonds
  • 1/4 cup crumbled blue cheese
  • 1/4 cup Julienne Carrot

For dressing:

  • 1/2 cup salad oil
  • 1/4 cup balsamic vinegar
  • 1/2 cup fresh strawberries
  • 1 orange, juice and zest
  • 2 Tbs honey
  • pinch kosher salt
  • pepper to taste

Method

  • Arrange all ingredients for salad on plates or in a large bowl
  • Combine all ingredients for salad in a blender and blend until smooth
  • Drizzle dressing over salad or toss together and serve immediately
